Red Cabbage, Pomegranate & Walnut Salad

Here's a quick, crunchy, and tangy salad full of yummy goodness. It combines raw red cabbage, raw walnuts, pomegranate seeds, and orange zest in a pomegranate vinaigrette.


Pomegranate Vinaigrette (makes ~1 cup)
5 tablespoons pomegranate juice
3 tablespoons cider vinegar
1 tablespoon agave syrup
1.5 tablespoons very finely minced shallot
1/8 cup flaxseed oil
salt & pepper to taste

The dressing is on the tart side. Those with less acid-loving tastes may want to use a seasoned rice vinegar in lieu of the cider vinegar.

    Beautiful picture of the salad, and it sounds wonderful. I love the flavors you combined.

    If you wanted a little sweetness as well as thickness in the dressing next time maybe a tablespoon or two of pomegranate molasses would be good. That was what popped into my mind when I read your description.

    I love that you used flaxseed oil. Did John know?

    I love pomegranate too; the little burst of tart juiciness from each seed is almost thirst-quenching.

    No, John never seems to cop on when I used flaxseed oil on salad...in this case especially, the pomegranate juice and other flavors are quite robust, so the oil is not in the fore.

    I thought of pomegranate molasses, I've heard of it but never made it, but it sounds really intriguing.

    Good work on hiding the flaxseed oil. I had to do that here too until my hubby got on the health bandwagon with me.

    I buy my pomegranate molasses (I know shocking right?). Although I think the process is the same as making balsamic glaze. Maybe I will try that next and see if I can make my own. I will let you know if it is as easy as I expect so I can stop buying pomegranate molasses, it is ridiculously expensive here.
