Rather Full

This rather full plate of food was Saturday's dinner. So much for portion control! This is hubby's favorite type of meal, so plates were empty. We're hearty eaters around here anyway, so a plate of food like that is child's play. At any rate, most of it is veggies without too much fat.

From left to right, we have nut loaf, a little cabbage from my garden, parsnips (center), potatoes, and roasted beetroot with shallots, walnuts, and thyme. The gravy is just veggie broth thickened in a roux.

I'm sort of ashamed to say this, but I love linking to other people's recipes; it makes life so simple. The nut loaf, or should I say Nut Roast Extraordinaire comes courtesy of Diet, Dessert, and Dogs. I followed the recipe pretty closely, but I didn't have any old-fashioned oats so I left that out, and I used almonds and pine nuts in place of brazil nuts. I also added a few different seasonings. All in all, this nut roast is good, and I'll be making it again.

The veggies were gently cooked in veggie broth. My cabbages are small this year, but it's kind of fun to be able to eat a whole one at once.

    Thanks for posting this. Believe it or not I have never made or eaten a nut roast. I was never quite sure what to expect. But since you like them I will definitely give it a try.

    BTW, that looked like a dinner my hubby would love so I know why yours did.

  2. Yeh, it's a real "blokes" meal.

    I think I prefer nut loaf to bean or mushroom loaves because you can play around with all different types of nuts. I've made one with peanuts before, which was extra yummy.

    I think I am going to play around with this for dinner tomorrow. Peanuts would definitely add their own unique flavor.

    I assume it is important that all the separate ingredients are finely chopped, or grated. Is this correct? Looking at the ingredients it appears the flaxseed and bread crumbs are the binder.

    It really looks oddly like meat loaf to me. But, I am sure the hubby will love it especially if there is gravy involved.

  4. Yes, I chopped them fine, but then the recipe calls for part of the veggie mixture to go into the food processor too, so that made the texture finer.

    Thanks. I only looked at the ingredients (not the directions) as you could tell. Expect to see my take on this tomorrow. I have some modifications in mind that will make it very different, hopefully in a good way.

    I am so glad you posted this dinner. Nut roast has been on my "questionable" list for a while. It seemed a little too granola, but what the heck. Granola is probably a good descritpion of my cooking style now so I may as well embrace it.

  7. Like meatloaf sandwiches. What a great idea. I probably wouldn't have thought of that.

    I was just looking through some of my British vegetarian cookbooks and nut roasts are in all of them. The process looks the same for each recipe. I think I am going to try to lighten the roast a little so it is a little more figure friendly.

    You're so fortunate to have your own veggies from the garden (my own attempts were sadly total failures this year). I can't think of any better nutroast accompaniment than root veggies!

    Thank you in person for the recipe. The adjustments were mainly because I didn't have oats or brazil nuts on hand. It's a wonderful recipe...it's a keeper for me.
