Here a couple of ways I've been using semi-dried tomatoes:
They went well with blanched romano beans, sauteed briefly with garlic slices and drizzled with olive oil and balsamic vinegar.
I went to a potluck today and took the BLT Salad from VeganYumYum; I tossed in some semi-dried toms along with some fresh ones.

ReplyDeleteYou are reading my mind. I was going to post a question and ask you what you do with your semi-dried tomatoes.
We like to eat ours as a warm or room temp side dish when I first make them. The leftovers get cut up and used to dress pasta with basil. They are also really good on roasted veggie sandwiches in place of fresh tomatoes. I haven't tried it yet, but I bet they would be good in salad dressing or as a base for tomato pesto.
I love your idea of combining them with fresh tomatoes. That is such a good idea to change the intensity and texture in the dish.
