Food Stuffed with Other Stuff

Vegan MoFo 2015 Day 9: Most retro recipe.

When I think of retro food, the very first thing that comes to mind is of course, prawn cocktail.

Then my mind turns to stuffed peppers (or vegetables of any kind really), hollowed out pineapples stuffed with fruit balls, bread rolls filled with soup, and cabbage rolls. Once everything possible has been rolled, filled, or stuffed, we could then move on to things served on toothpicks...

Taking into account that I wanted to make something I actually felt like eating on a warm day, I went with a simple white bean salad stuffed into tomatoes from the garden. I dressed it with olive oil, lemon juice, and oregano, salt, and pepper.

I'm really pressed for time this week, but I'll try the best I can to keep up with everyone's posts.

  1. I was a veggie for a long time before I went vegan, and I remember that I used to get served a lot of stuffed vegetables - usually peppers. I still have a bit of a soft spot for vegetables stuffed inside vegetables!

  2. Ha, food stuffed with other food seems to sum it up nicely. But your dish looks lovely! If I had garden tomatoes like that, I would want to make them the star of the meal too.

  5. I like stuffed tomatoes! But I usually put them in the oven.

Speaking of prawn cocktail, have you seen Éphée's take on them?

    1. I think roasted ones are tastier!
I checked out Éphée's post; I love the way she cut out the little tofu crevettes! She nailed it.

  6. This looks great! It looks just like something you might see in a '50's cookbook, except it actually looks tasty too! I would love to have this for lunch on a warm summer day.

  7. You had some great ideas! Food stuffed with other food makes me think of Tofu Pups in Crescent Rolls. That would be a good retro food.

    1. That would be a good one for this theme. I was also thinking of pineapple upside-down cake...but I don't like it, and didn't want to have to make it and then deal with trying to eat it.
